Valli Waitaki Pinot Noir 2021
From the Waitaki Valley, North Otago - from 10 year old vines at 200m above sea level.

This was an early harvest of exceptional quality and miniscule volumes. The small bunches were hand-harvested and whole bunch pressed for gentle extraction. The pressed juice was homogenized and put directly to barrel without settling in order to benefit from the full solids during fermentation. The wine was fermented in French oak barriques (20% new) with weekly stirring through malolactic fermentation. It was blended at 11.5 months and bottled without filtration.

“The limestone-rich soils influence both the shape and the flow of this wine with exquisite harmony between the tautly textured mid-palate and the racy acidity that increases the length. The nose is immediately fresh and complex with lemon juice, green apple, candied zest, and a distinctive savoury note that is derived from the high solids fermentation. The wine is a juxtaposition of intensity and subtlety with real fruit purity at the core. Made in tiny quantities, this wine is immediately intriguing and should continue to evolve for 12+ years.” Jen Parr - July 2023
