The winemaking is the same as our Tonic Grenache: hand-picked, some whole bunch employed in fermentation for perfume and that savoury something. Post ferment our benign neglect kicks in, topped regularly in old barriques and puncheons but otherwise untouched. Racked and sulphured just before bottling. In my opinion, the star variety in the Barossa Valley.
"Blackberry, boysenberry, meaty and perfumed with dried herb, some dark chocolate in the mix too. It’s medium to full-bodied, roast beef and dried herb, black fruit, lots of silty Turkish coffee tannin, a little orange peel amaro bitterness on a nice long finish is nice too.
