Domaine Simon Bize et Fils has to be one of the best kept secrets in Burgundy today. Famed for producing wines with impressive capacity for cellaring, under the care of Chisa Bize the wines are also more dynamic and show greater aromatic detail. The Domaine has some of the oldest average vine age anywhere in the Cote d'Or, and Chisa practices her amalgam of organics and biodynamics coined as "Bize-dynamics". Yields are kept low, and winemaking utilises a high percentage of whole-cluster fermentation.

The 2019 Savigny-lès-Beaune 1er Cru Les Talmettes wafts from the glass with scents of rose petals, peonies, exotic spices and potpourri. Medium to full-bodied, layered and velvety, it's concentrated and gourmand, with a succulent core of fruit, ultra-refined tannins and a long, penetrating finish. 92-94 points William Kelley - Wine Advocate (Jan 2021)

The 2019 Savigny-lès-Beaune Les Talmettes 1er Cru is perhaps the most tertiary of Bize’s cuvées, with the stem character most pronounced at the moment. The harmonious, medium-bodied palate features fine tannins and well-judged acidity. The whole bunch is certainly less tangible toward the finish, which is very smooth and persistent. A little paler in colour than Les Fourneaux, but on the other hand the bouquet is really elegant. This has clearly got the stuffing behind as well.
