On the westside of Mt. Etna the Nerellos Mascalese and Cappuccio don't thrive as well as other varieties do. Hence this centenarian mixed vineyard, at an impressive 1200m above sea level. Due to the slow ripening, harvest typically takes place a the end of October or even early November! Even then, this is a light-bodied, bracing rosato that will shine with lemony, fresh seafood. After fermenting via a native yeast pied de cuvee', it rests in stainless steel for just 5 months before lightly filtering and bottling. Unfined.
