Now under the stewardship of Robert Chevillon's sons Bertrand and Denis, these passionate pair of vignerons are tireless in their pursuit of the finest expression of Pinot Noir possible. After meticulous care in the vineyards across the year, grapes are hand harvested, sorted and de-stemmed before receiving a cold maceration in vats for 5-6 days and natural fermentation lasting 2-3 weeks. Maturation lasts from 15 to 18 months in a mix of 30% new and 70% second use barrels. Les Saint-Georges is the most lauded Premier Cru site in the commune, lending its name to the town of Nuits in the 1890's to become the full Nuits-Saint-Georges we know today. As the de facto Grand Cru vineyard, Les Saint-Georges is on the gentle mid-slope with varied and complex limestone soils. Wines from Les Saint-Georges are rich, full, complex, and have an enviable track record for longevity in the cellar.

There is just enough reduction to blur the nuance of what are clearly ripe aromas trimmed in just enough wood to notice. Otherwise, there is terrific energy to the mineral-driven and precise larger-scaled flavors that are at once sleek and powerful while exhibiting the usual youthful austerity on the gorgeously long, balanced and built-to-age finale. The 2020 Nuits-Saint-Georges 1er Cru Les Saint-Georges opens in the glass with aromas of dark berries and plums mingled with warm spices, baking chocolate and loamy soil. Black purple, the bouquet is very backward, but more importantly not at all cooked. Now the concentrated deep raspberry fruit starts to emerge, red rather than on the blacker side.
