Now under the stewardship of Robert Chevillon's sons Bertrand and Denis, these passionate pair of vignerons are tireless in their pursuit of the finest expression of Pinot Noir possible. After meticulous care in the vineyards across the year, grapes are hand harvested, sorted and de-stemmed before receiving a cold maceration in vats for 5-6 days and natural fermentation lasting 2-3 weeks. Maturation lasts from 15 to 18 months in a mix of 30% new and 70% second use barrels. Along with Les Vaucrains and the eponymous Les Saint-Georges vineyard, Les Cailles is one of the most highly regarded parcels in Nuits-Saint-Georges. Bordering Les Saint-Georges, Les Cailles produces wines which often rival those of its neighbour, and while they may not display the outright power they are perhaps more refined here.

Classic ruby color. As is often the case chez Chevillon, this is the most elegant wine in the range with its spicy, ultra-fresh and restrained nose that mixes both red and dark pinot fruit, violet and sandalwood. The equally restrained, cool and intense middleweight flavors are notably finer with superb detail and ample minerality on the moderately austere, balanced and strikingly lengthy finish that is shaped by fine-grained tannins. The 2021 Nuits-Saint-Georges 1er Cru Les Cailles wafts from the glass with aromas of sweet red berries and plums mingled with rose petals, spices and orange zest.
