Robert Chevillon Nuits Saint Georges 1er Cailles 2019
The wine making is traditional, with 100% destemming, cold maceration followed by slow fermentation, and spend 18 months in oak, 25-30% of it new (for the premiere crus). The final result is structured, fruity, elegant, fine and complex wines, made for long aging but also accessible relatively early.
After the more reserved Les Cailles, I was taken aback by the expressiveness of Chevillon's exquisite 2019 Nuits-Saint-Georges 1er Cru Les Saint-Georges. Bursting with aromas of wild berries, orange rind, peonies, rose petals and spices, it's medium to full-bodied, lively and elegant, with superb depth at the core, ultra-refined tannins and a long, perfumed finish. Bertrand Chevillon reported yields some 50% below average in 2019 but was justly delighted with the quality of the wines. This is another powerful, structured vintage at this address, but the wines are more vibrant than the fine 2018s and more structurally refined, too. As I've written before, this is one of my favorite addresses in all of Burgundy. Old vines, cultivated soils, moderate yields and long fermentations with entirely destemmed grapes are the order of the day at this address, with the Nuits-Saint-Georges Vieilles Vignes seeing some 20% new oak and the premiers crus 30%.
