Praeter Yellow Flower Pecorino 2025

From the Kersbrook Vineyard, 300m above sea level, at the northern end of the Adelaide Hills. A savoury textural white, originally from the hill of Abruzzo and Marche in central Italy.  The 2025 growing season was early and warm, yielding open bunches with small berries and outstanding concentration. 

Grapes were whole-bunch pressed before being fermented in seasoned French oak.  Spontaneous malolactic fermentation was left to occur, and the wine rested on lees for 8 months, building complexity, before being blended and bottled in late 2025.  

Damn! This is powerfully aromatic - full of mealiness, salty, saline intensity, yellow orchard fruits, white and yellow florals, mirabelle plum, white chocolate and all the levels of beautifully pitched, poised savoury curry leaf character. It's easy to get fruit in the hills, but this level of detail in the savoury component requires a deft touch. Lovely fluidity on the palate, fleshy and moreish, tighter through the core than the lovely 2024 release, with an underlying freshness and vibrancy, finishing with just enough phenolic matter to create a level of insane drinkability. The Prince of Pecorino!
