Clones 114 & 115: Cold soak 9 days
Clone 777: 9 day carbonic maceration. Handpicked and cold soaked with 30% whole bunch. Spontaneous fermented and left 20 days on skins, before being basket pressed into aged French oak for 9 months. Bottled with no fining, or filtration.
Classic Adelaide Hills Pinot - decidedly darker with great wood spice and florals. Really well put together!
