Harvested at 10 baume, Free run juice 500L/T. Cold Settled for 3 days then racked with fluffy lees to ferment. Spontaneous ferment in tank, fermented for 14 days. Chilled at 40g/L RS
Rested for 6 months on fermentation lees. Racked, filtered, bottled.
