Honey Moon Vineyard Blanc de Blancs 2023
100% Chardonnay from the Adelaide Hills, Methode Traditionelle. 87% from Charleston 2023 vintage with 13% Reserve wines from Magnum, 2012 vintage from Piccadilly. Whole bunch pressed, with 500L per tonne taken and fermented in a mixture of smaller and Puncheon, older french oak. Aged on lees for 10 months prior to tirage, disgorged by hand to order for us here in the shop. Bottled with 4.75g/L of dosage.
“Vibrant, intense, scintillating minerality and crisp, tight bubbles. Lots of perfume, some gentle savouriness,
a touch of grip and pucker in texture, too. Lemon curd, lime mineral water, a slip of vanilla wafer, a little gummy
