Guroo Stephen George Cabernet 2021
Classic Cabernet with lifted notes of cherries and plums with grippy tannins. Hand picked. 13.3 beaume. Pumped over only twice during ferment so to avoid over extraction of tannin. Pressed off just before dry. Aged French oak for 10 months.
Stephen George is a living icon of the Australian wine industry. A pioneer of the Adelaide Hills wine region and the premium Piccadilly Valley subregion, he planted the 3-hectare Ashton Hills estate vineyard in the early 1980’s. The vineyard is now widely considered the greatest single site for pinot noir in South Australia.
