The Domaine de Chantemerle, which is run by Adhemar and Francois Boudin, is deeply rooted in history. They farm 16Ha in Chablis - with a firm ideology around the use of no oak in their wines. What began as a family feud has now become their winemaking philosophy for at least three generations. Adhemar took over from his Grandfather who was a cooper - and refused to use oak. Their son Francois now continues the no oak mantra and is utilising a mix of cement and stainless steel, as well as texture through subtle lees work and ageing.
 
The wines for the last three vintages have shown exceptional weight and poise, this mix of concrete and stainless steel retaining freshness in the warmer 19 and 20 vintages - and it should come as no surprise that the subsequently cooler 2022 vintage has excelled, with that judicious lees work allowing that textural component to shine again!

Aromas of fresh herbs, white blossoms, chalk dust. Refined, pure, lively; flavors of lemons, limes, sea salt. As an aperitif or with oysters or other fresh shellfish; also soft ripe French cheese.
