Chablis producers since 1815, the organic Billaud-Simon deliver exceptional wines whilst respecting nature, terroir and tradition. They have a diamond-like clarity yet suave, elegant, flavoursome and harmonious Chablis’. Natural ferments and second use oak combined with stainless steel further add interest and complexity. These are classic-cut Chablis’ which drink superbly over a decade. A first-class Chablis producer and very highly regarded alongside names such as Dauvissat and Raveneau. 

Moderate wood influence surrounds ripe aromas of green fruit, citrus rind, ocean breeze and discreet nuances of mineral reduction. The round and rich, indeed even plush, medium weight plus flavors coat the palate with sappy dry extract while displaying impressive power on the youthfully austere and long if slightly woody finale. In the context of the 2021 vintage, this is a big, even robust, wine that isn't elegant, but it certainly doesn't lack for personality. Drink through 2028+. 93 points Allen Meadows - Burghound

The 2021 Chablis Bougros Grand Cru comes from purchase of juice and represents a couple of barrels (half actually aged in steel). The nose is well defined with fine delineation - hints of white peach and pear emerging. The palate is well balanced, that oak a tad pronounced at the moment, though it will be integrated with time. Fine persistence, this will probably be difficult to find but should give 12-15 years drinking pleasure. Drink 2025-2040. 91-93 points Neal Martin - Vinous

Purchased juice, two barrels, one wood and one stainless steel. Pale colour with a light lemon tint. More on the chunky side without the wood dominating. Slightly oily texture at the moment, though that is temporary, a little bacon fat reduction, with notable length and correct acidity.
