The Boisson family works in compliance with nature in all their different estates, with great respect for natural processes. A substantive work is being done on vines: no addition of fertilizer, tilled plots, manual harvesting, and during winemaking (indigenous yeasts, long aging in barrels, bottling without filtration).
Delicate and expressive bouquet. Aromas of citrus fruits such as lime and grapefruit mingle harmoniously, bringing a lively and tangy note. Subtle nuances of white fruits like green apple and pear also make themselves known, adding a touch of sweetness to the overall profile. Discreet mineral notes reflecting the Burgundian terroir complete the aromatic picture. This Bourgogne Aligoté reveals its full liveliness and freshness. A well-present acidity brings a sense of dynamism and balance. The citrus flavors express themselves with energy, offering a surprising freshness and a slight bitterness. Subtle mineral notes add complexity and depth to the overall gustatory experience. The persistent finish leaves a pleasant tangy sensation in the mouth.
