David Pearse and Steven Griguol work from the Adelaide Hills with an aim to create the perfect spirit - hence the name "5Nines" = 99.999% perfection. In this series, they select the best of the best to be bottled at cask strength with no water added, no chill filtering and no flocking. Made using locally grown ale malt, fermented for seven days then double distilled, the whisky was matured in a single heavy char ex-Tawny cask. and bottled at cask strength at 59.5%.
