"In 2023 we suspected we would be able to make three Pinots from our vineyard but probably only one Chardonnay. There was just such clonal distinction and definition in the Pinots that we felt there would be enough of a difference to justify the 3 different Pinots and indeed as we came to blending that inkling turned into reality. Our estate Pinot, the Dijon Clone and the Huldufólk are the result. With the Chardonnay we were unsure as to whether the 96 clone from the usual patch on the western side of the vineyard would deliver a Huldufólk like in previous years. The fruit didn’t have the same precision as we would expect and as we came to blending we decided that the two hogsheads weren’t as well-threaded as previous iterations. We decided to put them into the main blend instead which has given it a more powerful lift in 2023." Gilli and Paul, Sailor Seeks Horse

Picked at the end of April and into May with 5% whole bunch and our more traditional Tasmanian clones of 8048 and 2051.

Classically framed here with savoury components that add levels of complexity to their traditional bright just ripe strawberry, a melange of red and black berry fruits, graphite and tea. Satiny textured, with sinew and tension - coiled and pure through the mid palate with a delicately natured gentle finish, time is required here to garner the absolute most, but there's an immediate pleasure in Gilli and Paul's capacity to create layered, balanced tension.
