
Praeter Langhe Nebbiolo 2021
Praeter was started by Matt Large in 2018 after his first vintage working in Barolo the year prior. It was born from a desire to explore and attempt to understand Nebbiolo in Australia’s soil and climate, but since Praeter’s establishment it has developed into a lens through which Matt has been able to select and celebrate choice parcels of fruit from special vineyards in both Australia and Italy
100% whole bunch Nebbiolo from the vineyards of Figli Luigi Oddero. What started as an experimental method of fermentation in the Luigi Oddero cellars, a question borne of how far can you push this, has become Matt Large's continual pursuit of moving and shaping tannin and aromatics through whole bunch fermentation. Sourced from the Drucá vineyard in the commune of Barolo. Left to ferment for 10 days before gentle foot-stomping and then pressing to finish ferment in tank and the older wood. Matured in older barriques for 12 months before blending and bottling. Barolo fruit, declassified to Langhe Nebbiolo in order to celebrate the detailed aromatics and fine tannin from the 100% whole bunch ferment.
