To produce something pure and juicy, Pérez de-stems 90% of the fruit, and ferments wild in stainless-steel vats. Fragrant and spicy, with good flesh yet powdery structure, this could be a top-notch Pinot! Expect loads of racy, black cherry, peppercorn, ripe strawberry and iodine and a long, perfumed and chalky close. Simply outstanding value.
