For several years, the vineyard has been left completely unkept and unpruned, with no trellising in place. The vines sprawl freely across the landscape, while pigs, geese, guinea fowl and cows roam amongst them. The site faces north, with a small creek running through the centre of the vineyard. Native flowers and plants grow beneath the rows, with no herbicides or pesticides applied and no cultivation undertaken. The vineyard is dynamic in every sense of the word — biodynamic, ever-changing, and full of attitude, energy and new ideas. It is a site that may act as a catalyst for broader change within viticulture. In the current vintage, the vines were left unpruned, resulting in an incredibly low yield of just one tonne per hectare.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eAll fruit was hand-picked and cooled overnight. The following day, it was hand-sorted before a portion was pressed cold as whole bunches to preserve purity and line. Another portion was de-stemmed and left on skins for 24 hours in a cool room to build texture and flavour. The juice was then settled and fermented in a combination of clay amphora and large-format oak. The wine progressed through various stages of natural malolactic fermentation and was sulphured just prior to blending.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eOh boy! It's been a while between drinks for us looking at one of Nic Peterkin's bottlings and this is genuinely one of the great glasses we've put the schnoz in this year. Swathes of mealy, exotic South East Asian fruit like star fruit, green melon, quince, preserved lemon, kiwi and this salty, saline derived top note. There's poise through a judiciously textured mid, with fanning sweet lemon curd and clotted cream and a beautifully pithy, tonic like finish. One of the best expressions of Sauvignon Blanc this country has seen.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003e\"\u003c\/span\u003eAmphora and older barrels host the wine, the fruit from an organic\/biodynamic farmed site in Yallingup. The vineyard was not in great shape when first approached, but has been tended to better health in recent years.\u003c\/p\u003e\n\u003cp\u003eStrap in for the superlatives. The advocacy is here. This is stellar. It defies the varieties inherent overtness and straps in serious minerality, a compact and yet concentrated flavour profile, scintillating acidity. appropriate, substantial savouriness but only as a harmonious counter to subdued but refreshing, just-ripe tropical fruits and laid back citrusy freshness. It clatters across the palate with its brine, it tightens on gentle trim of chalky pucker, it finishes with more brine and a good dose of pink grapefruit sizzle. Utter charm coupled to proper complexity. A serious contender for one of the greats of the variety in this wide, brown land.
