Aged on lees for 10 months prior to tirage, disgorged by hand to order for us here in the shop. Bottled with 4.75g\/L of dosage.\u003c\/p\u003e\n\u003cp\u003e“Vibrant, intense, scintillating minerality and crisp, tight bubbles. Lots of perfume, some gentle savouriness, \u003cbr\u003ea touch of grip and pucker in texture, too. Lemon curd, lime mineral water, a slip of vanilla wafer, a little gummy \u003cbr\u003ecoconut marshmallow character and a pulse of saline minerality. Framed as an aperitif style, or so it seems, and done with aplomb.
