Felix Clark of Ester Spirits then stepped in to handle the final production stages, blending, and market release, making this the award-winning  distillery's first-ever foray into the world of whisky.\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eCrafted in small batches from Australian-grown malt, then rested for nine years in a tawny casks before a finishing stint in Oloroso and PX. It's a compelling combination that brings together juicy fruit, dark sticky sweetness and a gentle thread of spice. A whisky with plenty going on – a flickering of tropical notes, chocolate-dipped apricots, caramelised banana and soft baking spice carrying through the palate. Full-bodied and generous without being heavy.
