Surrounded by peppermint gums, the Peppermint Paddock Block was replanted from Shiraz to Chambourcin in 1989. Open Fermented, foot trod and basket pressed prior to a liqueur tirage kicking of a secondary fermentation. Psychadelic purple with aromatics of spiced plums, dark cherries and ripe red berries merging to a semi-sweet, enticingly vibrant fresh red fruit melange on the palate.
