The Chevillons are no strangers to vinifying great Pinot, and ‘Les Cailles’ is no exception. Fruit for this epic single-vineyard wine comes from a stony plot of vines planted in the 1930s. The wine is insanely aromatic and elegant, marked by flavors of ripe cherries, dried flower petals, vanilla spice, and candied orange peel.
