100% Carricante from the Eastern and Southern slopes of Mount Etna from vines 20-60 years old at 700 to 900m above sea level.
Handpicked, de-stemmed and softly pressed prior to fermentation occuring in stainless steel for 12 days using specific indigenous yeasts selected from Benanti s vineyards. Maturation continues on lees in stainless prior to bottling.
Immediately exotic, with an array of punchy orchard fruits, quince, grilled nuts, lime zest and sea spray surrounded by really neat, precise reduction. The texture here is excellent a semi hybrid saline Burgundy feel - white chocolate, peach and quince like phenolics that interplay with a salty, lime like acidity leaving everything fresh and moreish. Great drink!
